BUMP from the front :)

I dont know how long I will take pictures of the bare belly (it makes me uncomfortable to show off in person) but right now I think its neat how my belly is changing, not only from the side but from the front, and in just a few weeks! I think Im going through a growth spurt right now though because I started getting morning sickness again.  Luckily it hasnt been bad, its literally just in the morning (unlike first trimester - all day ms) and it goes away after an hour or two.  I have a feeling in the next 3 weeks, I will be huge! And that means more huge than Im already feeling. :)

1/24/10 - 21 weeks (Dan requested I take out my bb ring because he thinks my belly is cuter without, Im hoping it wont leave a scar or look weird as the belly grows!)

To.. Half way point!!

I am 20 weeks today, I cant believe time has went this fast, its crazy!! Im enjoying pregnancy a lot.  2nd trimester is awesome, no morning sickness, more energy, etc.  I am going to enjoy this trimester to the fullest because I have heard that 3rd can be a little uncomfortable, I still have 8 more weeks until that point so I will live it up while I can.. haha.  We are learning so much in our birthing class and its bringing Dan and I closer together.  Im excited to see what a baby will do to our relationship.  I know it will not be easy and probably very difficult at first but to have our family complete will be amazing.  He wants a baby so much and is just excited as me, I feel blessed to have a partner with the same attitude.  I also feel very fortunate that we have family all around us.  I want to always make sure Dan knows hes number one and I want to commit to him by spending time with him alone every month (date night!).. I know I wont have problems finding a babysitter! :)

Low-Cholesterol Scalloped Potatoes

Serves: 6
A low-fat, heart healthy version of this traditional comfort food.


INGREDIENTS
4 cups thinly sliced raw potatoes
1 onion
1 tablespoon chopped parsley (optional)
3 tablespoons whole grain flour
1/8 teaspoon pepper
1-1/2 teaspoons salt
3 tablespoons low cholesterol margarine
1-1/2 cups skim milk


DIRECTIONS
1. Layer potatoes and onions in casserole, sprinkling flour between each layer.
2. Heat milk and margarine and season with salt, pepper, and parsley. Pour sauce over all layers.
3. Bake 1 hour covered at 350° F. Remove cover and bake additional 30 minutes.

To.. pumpkin

One of my favorite flavors is pumpkin, (pumpkin soup, pumpkin pie, pumpkin risotto, etc) I found these muffins that Im going to try to make this weekend.. yum!

Pumpkin Muffins

Serves: 9
Serving Size: 1 muffin
Sweet treat for dessert, or at any time of the day.

INGREDIENTS
2 eggs, beaten
1 cup sugar
1 cup canned pumpkin
3/4 cup olive oil
1/4 cup water
1-2/3 cup flour
1 teaspoon baking soda
3/4 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon ground cloves
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1/2 cup nuts, chopped (optional)

DIRECTIONS

1. Preheat oven to 350º F.
2. Combine eggs, sugar, pumpkin, oil, and water in a medium-sized mixing bowl.
3. Stir together flour, baking soda, salt, baking powder, and spices in a separate bowl.
4. Add dry ingredients to wet, and stir to blend.
5. Place batter 3/4 to top of non-stick or lightly oiled muffin tins. You may also use cupcake cups.
6. Bake 20 minutes or until toothpick inserted into the middle of a muffin comes out clean. Remove from pan right away.

To.. fun weekends!

I had a really great weekend this past weekend.  Usually we dont do much and just hang out at home and do a whole lot of nothing.. this weekend we actually had plans and not the kind of plans that take up the whole day, it was nice.  On Friday night, Dan and I made risotto and scallops together then Dan really wanted me to watch Star Trek.. the new one.  I wasnt thrilled but I did end up liking it.  It wasnt at all like the tv show Star Trek and there were good looking guys in it, so that helped. :)  After that we decided to see Avatar in 3d.  I thought it was a really good movie, I definitely recommend seeing it in the theater for the 3d experience.  Its really cool.  At first it was hard to get used to it and I thought I was going to throw up, lol.. after the first 20 minutes, I got used to it and got to enjoy the rest of the movie.  It was quite an experience.  Dan and I came home around 1 am and hung out for a while, it was a perfect night.

On Saturday, Dan woke up feeling sick.  He ended up sleeping the whole day so I just lounged around the house and didnt do much.  He started to feel better around 4 so we went grocery shopping then made an awesome dinner.. well I guess it was breakfast at night.  We had bacon, eggs, pancakes.. yum!  So far, during this pregnancy, breakfast is what I enjoy most.  I could eat hashbrowns, toast, bacon, eggs, pancakes, bisquits and gravy, etc.. EVERYDAY! YUM! :)
 I had made plans for the night with my mother in law Buffy to go to church with her.  The Vineyard has holy spirit night every month after the Saturday night service, its a really cool experience and I loved it. It was really powerful and you could feel Gods presence.  I definitely want to go again to that.  I got prayer for lots of stuff, specifically for things going on in my life and for the baby.  I feel a lot of peace right now and ready for my appointment on Wednesday. I cant wait to see the baby and find out the gender, Im very excited!!

On Sunday, I went to the gym with Amy.  We hadnt gone last week together so we had a lot to catch up on.  We ended up walking 4 miles which I was thankful for because I didnt get to work out on Saturday because Dan was sick.  Elizabeth came over for a while and hung out and then Dan woke up and made breakfast. :)  He usually comes home from work around 7:30am so every Sunday I have the morning to myself until he wakes up around 1 or 2.  We hung out, took a shower/bath, and then ate dinner.  Our first birthing class started at 6:30.  Its a 6 week course.  My small group hired a doula so there are 5 couples and we are meeting in her house.  It is awesome, Im glad we did it through her instead of through the hospital.  We were there until about 9.  We could ask any questions, she had activites and lots of really good information.  I feel ready already and we still have 5 more classes!  The husbands were included too and it wasnt weird with them there, i dont konw why i thought it would be though lol.  I know Dans going to be an excellent partner, and I trust him completely.  I have a lot of peace with labor and delivery now instead of fear that I used to have.

Part of our homework has been to ask women we know about their birthing story.  I have emailed about 20 something women so far.  I love reading their stories.  It reminds me how strong women really are and that I am one of them! Its hard to believe sometimes haha. I feel more prepared and ready than I did before.  Its really encourging to hear about other womens experiences.

To.. resolutions

So, I dont recall if I have ever made resolutions in the past ... I'm going to say no since I cant remember.  I always try to eat healthy, work out, and set high standards for myself for how I treat people and how I act.  I do that every year, well everyday, I try to do.  This year I decided I would make a few resolutions to see if I could stick with them.

The first one is to read the One Year Bible, everyday.  By the time Dec 31st comes around, I should have read the entire bible.  It is something I have never done and Im committed to doing it. 

The second one I made is to stop gossiping at work.  Yes, this one I probably shouldnt be doing in the first place but its very difficult when you work with 6 men.  I swear they are more chatty and nosy then women.. and I, of course, feed into it since I hold all the information.  Well, I decided Im not going to do it anymore.  Im going to keep my mouth shut, just stick with work business, and not talk bad about anyone, no matter how mad they make me.  Well this resolution has already been a fail but I know its something I need to work on.  I swear these guys test me and with all these hormones running through my body, its hard to be patience and understanding at times... especially when they are driving me crazy! This was a bad week, next week I will start fresh. (I want to note that I have stopped gossiping in my life (its been a year), being from a small town, its very easy to give in to it since everyone knows everyone but I reached a point I had to stop, talking about people is draining and a waste of time!)

The last one is to eat healthy and work out routinely.  With first trimester, I had morning sickness from about 10 am until I went to bed at night, every single day for 8 weeks.  My midwife gave me permission to eat whatever I wanted.. she told me in the 2nd trimester I need to change my habits to healthy ones.  Well I took her advice.  I ate whatever I wanted, whenever I wanted, and however much I wanted! Thus, gaining 7 lbs in the first trimester.  :) Donuts, french fries, cookies, chips, my daily intake of chocolate, those were my favorite vices. 

Now that Im well into the 2nd trimester (18 weeks), I guess Im a month in.. wow... lol.  I am eating a lot healthier but I still havent made a full committment to really eating healthy.  I still eat chocolate, candy, chips, fried foods, donuts.. just not as much.. and I focus a lot of my eating on fruit, cereal, eggs, peanut butter, whole grain bread, V8 juice, milk, and orange juice.  I dont want to balance myself out anymore, I need to focus on eating healthy with the occasional treat.  Im up to 11 lbs right now, which I think and hope is normal but my workout partner started working nights so now I only work out once a week instead of 2-3.  Luckily, Dan made a resolution to lose weight and get healthy.  Last night we talked and made a committment to working out Tuesdays, Thursdays, and Saturdays.  Im so happy and blessed that I have a plan and a partner to stick with it.   

Another resolution I should make is to clean out our extra bedroom!! I need to buy bins and storage things to box everything up (to store at Elizabeths house lol) so I can get it out of there.  I still have some huge furniture pieces that I need to decide what to do with (purge!).  Its hard living in a little space with not much room, you really have to be creative!

Creamy Chicken Enchiladas (from babyfit.com)


Serves: 6

By using nonfat sour cream and yogurt, this recipe greatly reduces the amount of fat in the dish.

INGREDIENTS

1-1/2 cups cooked chicken breast, shredded into bite-sized pieces
4 cups torn fresh spinach leaves
2 green onions, thinly sliced
1 (8 oz) carton of nonfat sour cream
1/4 cup plain, nonfat yogurt
2 tablespoons whole grain flour
1/4 teaspoon ground cumin
1/4 teaspoon salt
1/2 cup 1% milk
1 jalapeño pepper, seeded and minced
6 whole wheat tortillas, 6-8 inches in diameter
1 1/2 low-fat shredded cheddar cheese


DIRECTIONS

1. In a medium sized saucepan, cook fresh spinach with a small amount of water, covered, for 5 minutes on medium-high heat.

2. In a large bowl, combine cooked chicken, spinach and green onions. Mix well and set aside.

3. Make the sauce: In a medium sized bowl, combine sour cream, yogurt, flour, cumin and salt. Add milk and jalapeño pepper and mix well.

4. Pour half the sauce into the chicken and spinach mixture and mix well. Divide the filling among the tortillas. Fold opposite ends of a tortilla up about 1 inch over filling then fold the left and right sides over the folded end, overlapping.

5. Place filled tortillas, seam sides down on an (ungreased) rectangular baking dish.

6. Spoon remaining sauce over the tortillas and bake, uncovered, in a 350 degrees F oven for about 20 minutes or until heated through.

7. Sprinkle with cheddar cheese and let stand for 5 minutes.

8. Top with salsa and chopped green onions as desired and serve.

To.. answered prayers

My church sent this email out today.  I thought it was really encouraging and such a testimony to what God is capable of (which is ANYTHING! ).

The Impossible Situation
Our budget was over $120,000 behind! The Vineyard begins a new fiscal year each September 1. After just 2 months we were almost 25% behind on our budget of $270,000 per month. In the entire 31 year history of this church, we have never been that far behind in any given month. We immediately realized that we were under an all out attack of Satan and his evil forces. His goal was to dry up our finances so we could no longer do the things that God was calling us to do.

Our Response
In the Vineyard, we've long been taught that when Satan attacks, we must counter-attack. We must come at him with the help of the Lord in the very ways that he comes after us. Thus as a leadership team we sent out a Happy Note in November (title: "Update on Finances and Offerings") and shared the problem in our Thanksgiving message. In both of those, we shared that we wanted to do 3 things.

1) Rejoice in all the blessings and miracles God had provided in our 31 year history.
2) Pray diligently that the attack on our finances would be broken.
3) Give generously of our tithes and offerings. In fact we asked everyone to seriously pray about giving at least 10% of their income from all sources every month and to give offerings as blessed above and beyond.

God's Response
God promises that He will bless people who give generously. In fact, in Malachi 3:8-12, the Bible promises that those who give will find the windows of heaven opened so that we receive blessings beyond what we can contain and the enemy himself will be rebuked and stopped. We prayed in faith based on that promise corporately and personally as we went after the forces of the evil one.

The Outcome
The outcome is nothing short of amazing. In November, after 2 short months we actually made our budget of $300,000 (combined budget with multi-sites) with a small amount extra to spare. We sensed the tide was beginning to turn. In December God opened the floodgates. In that month, we received over $500,000 in our general funds and almost $300,000 in our building fund. Our total income from all 3 sites was over $800,000. Surely it was more than we had even dared to dream (Ephesians 3:20).

Building Debt Erased
Through the years, we have enjoyed enormous generosity from our people in paying for our $8,500,000 expansion and renovation which began in 2004. Gradually we had worked the building debt down to $420,000. With the new funds that we received in December for the building as well as some we had saved, we are able to pay the debt off completely on January 5th, 2010. To pay off $8.5 million in less than 6 years is an absolute miracle. Each person that gave toward this amount is to be thanked and appreciated. We as a people truly have much we can celebrate.

Keep Up the Counter-Attack
As Christians, we sometimes win victories and then take "spiritual vacations." In other words, we go after Satan when he causes problems and then we ignore him when things go well. I recommend we keep the pressure on him continually. Again we need to do what we did in November.

1) Rejoice at the blessings we've received, including this one.
2) Keep praying that the enemy is pushed back in every realm - finances, healing, salvation, etc. Remember our combined budget is $300,000 per month.
3) We keep giving generously. To do all that God has given us, we need to have everyone in the church giving 10% of their income. Those who have more obviously can give offerings on top of that. As they do so, we will all prosper and the Kingdom will advance. The impact that we can leave on Central Illinois will stagger us over our lifetime.

Final Thoughts
I have often shared that I see God's generosity in a picture from Psalms 23. The last part of psalm 23 verse 5 says "My cup overflows with blessings." I often see the picture of being in a restaurant and having coffee. When I ask the waitress to refill the cup, she comes with a 5 gallon pail and overflows the cup everywhere. This is a picture of God's generosity of how He treats His kids. He has never been the God of just enough; He's the God of more than enough.

I want to thank everyone for this amazing miracle. We need to celebrate this fact corporately and among ourselves personally. It is a testimony that we can talk about for many, many years. Thanks for being a part in making this happen.

Recipes.. (post #1)

I think Ill post recipes on here so that I can find them easily. I have recipes saved in my email, on my favorites, all over the place.  They will be easier to find if they are all in one place.

Asian Chicken Wings Marinade: (from

2/3 Cup Soy Sauce

1/3 Cup sugar
1/3 Cup packed brown sugar
1/3 cup cider vinegar
2 tsp garlic powder
1 tsp ground ginger

Marinate the wings 8 hours to overnight. Bake 375 degrees for about 45-50 minutes. Enjoy!

Slow Cooker Meatballs:
1 lb ground turkey or ground beef.. mix meat with breadcrumbs, salt, pepper, garlic, basil, and an egg. shape into meatballs and place in slow cooker. throw a can of pasta sauce on top and cook for 6-8 hours.
((instead of breadcrumbs i saw a recipe that put STOVE TOP stuffing mix for turkey into their meatballs with a 1/2 cup of water. I might try that.))

Twice Baked Potatoes: (from http://myblessedlife.net/2010/01/twice-baked-potatoes.html)


Russet Potatoes
Cheese, Butter, Sour Cream, Cream Cheese
Parsley, Chives
Salt, Pepper

Boil potatoes until soft. Then place them on a towel to dry off a bit. Wrap in foil. Cut a “slit” in each and scoop out the potato, leaving a rim around the skin. Place potato “insides” into a bowl. Mash. (I love my hand mixer for this.) Add butter, cheddar cheese, sour cream and/or cream cheese, chives, salt and pepper to taste. Spoon potato mixture back into the potato “skins” Sprinkle parsley and extra cheese on top, if desired.

If desired, freeze in a foil pan. To bake right out of the freezer: 400 degrees for about 1 1/2 hours or until potatoes are warmed through. Enjoy!
